Kohlrabi

It’s pretty obscure. At least it was to me.

I saw the seeds at one of those bins that have the 10-and 25-cent seeds. So, I bought a packet. 10 cents is pretty cheap, even if it didn’t grow or we didn’t like it did grow.

So, I sowed them, watered them, and let them grow. And they did.
And they’re good!

Really good!

Kohlrabi is from the same family as cabbage, broccoli, Brussels sprouts, cauliflower…you know, all those good-for-you vegetables.

It tastes much like a broccoli stem, but is sweeter and milder. It can be eaten raw, or tastes great in a stir-fry. You can even use the leaves!

We pull them up when they are a little smaller than a tennis ball.

Pick up a 10-cent packet and try them yourself. C'mon. They’d look good next to your rose bushes!
Or at least buy a couple the next time you're at the grocery store.

Green Beans.....Again

Remember these?


Last weekend, Erin and I put some of those green beans in the freezer.
(yes, she's dressed. She has on her swimming suit)
(also, she's multi-tasking: talking on the phone, snapping beans, and watching kids in the pool)
While Erin snapped the beans, I kept them going in the kitchen. We're freezing these, and vegetables keep better if they are blanched first.


Next, they are cooled quickly in ice water.


Yum! Fresh, blanched beans.



This group made 20 cups. They sure will taste good this winter!

Thou Shalt Not Covet Thy Neighbor’s...

Asparagus


You may not all have asparagus beds like I do---yeah, I’m bragging and rubbing it in, I know. The ManyMeadows LOVE, LOVE asparagus. (and this is one thing you’ll find where we’re selfish and won’t share...unless you come eat with us!)

Right now I’m picking a small handful each day and soon it will be even more than that. It goes immediately into a cupful of water.

Even if you purchase your asparagus, the best way to store it is to break the cut ends off and stick the spears into a cup or glass of water. Store them in the refrigerator for about a week.

Try cooking them covered in the microwave in about a Tablespoon of water just until tender crisp and bright green.

Try grilling them on a layer of foil drizzled with olive oil, coarse salt and fresh ground pepper.

We eat asparagus on pizza, throw it in a salad, put it on a veggie and dip platter, add it to pasta, and even in an omelet. Can you tell we like it? Yes, we do! Yum!
